Maria's Low Carb Cabbage Soup

1/2 cup chopped green Onion or chives
5 cloves garlic chopped
2-3 tbsp canola oil
3 cups shredded cabbage or more if desired
1 tsp cumin
1 tsp oregano
1 cup cauliflower chopped in big chunks
2 boxes of Low sodium chicken broth
Salt to taste

In a pot put in the chopped onions and garlic with some oil and stir fry til caramalized, sprinkle cumin & oregano.  Pour in the Low sodium chicken broth & salt to taste. Oce it boils pour in the shredded cabbage.
Once the cabbage is soft, fully cooked, pour in the cauliflower and cook for 5 to 10 minutes til soft and your soup is Ready!   Serve!  This is very easy and quick to prepare, Bon apetite!
Serves 4 a total of 12 carbs
Carb for 1 serving 3 carbs


Low Carb Flax  seed Bread

4 tbsp flax seed grinded en a blender til it becomes like flour
1 egg
1 tsp salt
1 tsp baking powder
1 tsp romano cheese (optional)
2-3 tbsp  of water if needed

in a bowl combine all ingredients , mix well if batter is thick just add 2 tbsp of water and stir.
Grease a small square plastic sandwich container and pour your mixture.  Put it in a microwave
for 2 minutes and ready.   Enjoy!
Carb for 2 tbsp flax meal 4 grams minus the fiber
Fiber is 4 grams = O carbs!!


Maria's pesto

1/2 cup grated parmesan or romano chees
2 cloves garlic
1/2 cup olive oil, More if needed
2 cups fresh basil leaves washed and patted dry
1 cup spinach, washed and patted dry
2 tbsp pine nuts or cashews or peanuts
1/2 cup grated mozzarela cheese, optional

Combine all ingredients in a food processor.  Process til the Pesto achieves the consistency of a thick, rich paste. Add additional olive oil, as needed, 1 tbsp at a time to thin the Pesto. It can be used on top of any meats or just Toss with freshly boiled cabbage or shirataki Tofu.
Serves 4-5
